suggestions on where to go

I am looking for suggestions on where to go. My wife and I would like to go for a couple nights somewhere but not sure where. The hopeful plan is to be able to get some more backpacking in by maybe heading towards the Moab area between Christmas and new years. Problem is I don't know if it is feasible or not, meaning will we be stuck with crappy weather I.E. snow or not? We are prepared for the cold just don't really want to get socked in with snow, we are not above car camping if we had to as long as it is near some good day hikes.

Just gonna have to play it by ear and look at the long-term forecasts, and maybe have a backup plan at lower elevation, like some parts of extreme S Utah and N Arizona that are in the 3000' range might be a lot more comfy than higher spots that time of year.
