With all of the fishing I've been doing lately I've been able to try this out quite a bit and it's excellent.
1/4 cup salt
3/4 cup brown sugar
Splash of liquid smoke(if fish is going into a smoker this ingredient is not necessary)
1 tablespoon dry dill
1 teaspoon mustard powder
1/2 teaspoon cayenne pepper(optional)
1 teaspoon garlic powder
2 quarts water
Brine can be put in a big ziplock bag or a sealable tupperware container. Let fish soak overnight. Then throw them in the dehydrator, smoker, grill on really low, or oven on really low heat. Cooking time depends on how thick the fish is. For pan sized fish it's usually about 5 hrs.
