Best hike...at least on official trails...in the BSF!
Ummm...there's an unofficial route that's even better?!? I'd love to hear about that!
It's hard for me to rank my favorite dayhikes(since a lot of my overnighters could also be done in a day if I didn't have to drive several hours to get to them after working all night), but Honey Creek Loop is up there, at least in the Southeast.

Come to think of it, that loop does have more variety than anything I've done off trail. The Laurel Fork of North Whiteoak Creek is a very remote and rugged gem full of surprises but its tough getting in there. No trails and very wild.

We were a bit surprised that there wasn’t more water flowing over the falls but it has been relatively dry

My personal favorite, because it's down in a small gorge that I love to play in, and make an obstacle course of, Lower Boardtree Falls. Unfortunately, this was as close as I got before being apprehended by a ranger and escorted back to the trail, where I was given a warning ticket for offtrail hiking, and had to endure a speech about how dangerous that gorge is, and how they have to rescue people from it. Ugh, spare me!

It was the first test to see if my knee was holding up. Unfortunately, it did not and the entire hike out I was in excruciating pain. Whatever it is with my knee, I cannot hike more than four miles without pain. It’s a big bummer to me. IT's 8 months since my severe knee injury but it seems my knee is not healing at all. I guess this year I won't get many hiking miles in
 
I'm pretty fond of those, too, but that descent's a tough test for a bum knee(sidelined me for a day after getting mine fired up once).
Hope yours does better on gentler trails!

My brother-in-law took me to a falls much like that just outside of Syracuse.
