i am just starting to get back into hiking and want to get my son interest as well. I live in the Eagle Mountain area so would like something with a couple hours. A little about us. My son I will be hiking with is 9 years old. I have challenged him for us to hike at least 100 miles this year overall. So far we have hiked to Donut Falls, Angels Landing in Zion, The Subway in Zion and have planned to do the Narrows in Zion next week from the top down. We are well on our way to our goal but would like some ideas that aren't super crowded but would be a good day hike.
 
lots of great hikes along the wasatch range, up AF Canyon, Provo Canyon, Mt Nebo, and even in your backyard up Israel Canyon.
 
Agreed. Especially in the spring before the heat sets in some there are some great areas west of Utah Lake.
I am actually doing Israel next weekend.

You are also not too far from something like Deseret Peak and the willow lakes a bit farther west (although I only remember approaching from Grantsville)
