Mellow Southern UT hikes for the gimpy?

Hey BCP. I'm currently recovering from knee surgery and am starting to work up to small hikes on fairly flat terrain. I was planning a trip down to Southern Utah but I am having trouble deciding where to go because most of the places I know require steep descents into canyons, uneven terrain, scrambling, etc. Can anyone suggest any mellow areas/hikes around say the swell, escalante, or maybe robbers roost area that would be mellow enough for a gimp such as myself?

Hey there @TheDunedain. Nice to see you around. Are you thinking just short day hikes? What did you get done on your knee? I got one replaced late last year and it's causing me a lot of trouble. And before that there were multiple failed repair surgeries. I feel your pain!
