Gentle (Flat) Backpack in Utah

One of our party is somewhat disabled, but she can handle flat, preferably sandy backpacks. We have done Paria Canyon and Coyote Gulch with great success. We are thinking of the Escalante River between town and Hwy 12. Are there other suitable and beautiful backpacks in Utah in April and May?

I guess I should be more clear on what sort of route we are seeking. We generally do about 4 miles per day, but seven is not too much. We need to be out 3 to 5 nights. It's not so much the altitude gain which would be a problem, it would be difficult if the route has jumbled, large diameter, rough rocks for more than a hundred years. Thanks!
