I hope you get the dates you want! Another great hike for fall colors in Capitol Reef is Pleasant Creek. You can get some nice shots with the cottonwoods there, and it's not one of the more popular parts of the park, so you have better odds of getting some unique photos. If you haven't hiked to Observation Point in Zion that's a good one for amazing views. There are lots of great hikes in The Needles. Chesler Park, Druid Arch, the Confluence Overlook. I haven't done the Peekaboo trail, but I hear it's a really good one.
