I'm going to have a hard time finding food I'll eat while backpacking. I don't like beef jerky, nuts, dried fruits or trail mix.

There are some really good DIY meals as well in the ziploc bag cooking style, really almost anything you like there is a version for taking backpacking or you can create to take backpacking. mashed potatoes and cheese with bacon bits are a good dinner, bacon and cheese tortillas for breakfast, Peanut butter and tortillas, there are lots of dried soups out there, many pasta dishes can be dehydrated and taken with you...

How would one go about making these DIY meals?
It depends on what it is but almost anything can be dehydrated, Pasta you cook until it is about 75% done then dehydrate, most sauces (unless really greasy) can be dehydrated, then rehydrate in the field (pasta can be tricky but most food you just have to measure before dehydration and after and then replace that amount of water on re-hydration) Lots of good recipes here http://www.wildbackpacker.com/backpacking-food/recipes/

Where did you say you're from...? Surely not the USA. Isn't it un-American to not like beef jerky?
I guess that leaves you with Ramen noodles...

On a serious note. The site listed by DOSS above has some great recipes and ideas. Some really tastey stuff on there.

I've got a stock pile of "Natural High" and "Alpine Aire" backpacker meals from the OR, Great stuff.

I just tried to eat beef jerky again a few weeks ago to see if there was any I could eat.....still don't like it!

I've actually never had Ramen noodles before....not sure if I will like those yet.

I like Ramen noodles. I could probably eat it for dinner for a week if I had to in the backcountry. The secret is adding things to it. I like to add Sriracha Sauce and an egg to mine when I make it at home. Little chunks of ham, peas, and other vegetable are also good in it.

Second the motion on the Bear Creek soups. However, read the directions before buying. I got back into the Pioneer mountains once and realized that my soup required butter or something, I can't remember exactly what but it was more than water and I didn't have it. We didn't starve but it was clear that it lacked something. I thought they were all "just add water" and didn't even think to read first. Most are and some need more. Eh hem.......Yes, I know what just went through your head........"This guy must be an idiot".
