Hiking with a Newbie

Hoping you more experienced people can help....I'm looking for a trip to take a newbie on with ruins, rock art and solitude. Easy enough to take a newbie, yet remote enough that we won't see many if any people. We are looking to stay 5-7 days so water is a must....
The hike we had planned (Salt Creek) fell through...looking for something equally remote though. Any suggestions would be greatly appreciated!!

Will they be crowded with people? I've read it can get pretty busy there this time of the year?

Others here can give you better insight on it, but 'crowded' in the backcountry is nothing like crowded in the front country.

As a follow up for myself, although probably also helpful to LoriB; what are some of the better Cedar Mesa area destinations? I've got the Trails Illustrated map, and as you say, it seems that there's a lot to choose from. What are some of the ones that should be prioritized?

I think I've decided (depending on weather when we get there and permit availability) to go in on the Government Trail (easiest) and make a base camp and explore down canyon, then hike up canyon and again make a base camp and explore (day hike)...play it by ear and go from there. The Noob I'm taking has never even had a backpack on before so this way we can stay as long as we want (me forever, her, who knows...LOL) Open to other suggestions though...
